Avocado Soup

Yes, the word has a ring to it. And although most of us like to fantasize a sun-kissed, gorgeous summer, truth is in the tropics, it hits one real hard! In the Indian subcontinent, a lot of us dread summer; more so when you have to return home to a regular dinner.

Thank God for this wonderful cooling soup that summers do not feel as bad. Not on a week night anymore!


Avocado Soup


  • Ripe, seeded and peeled avocados: 2
  • Cold water: 2.5 cups
  • Cream: 1 can
  • Garlic: 2 cloves
  • Fresh lime juice: 3 tbsp
  • Chicken flavor bouillon: 4 tbsp
  • Cilantro: optional, for garnish
  • Salt to taste


Blend everything in a processor and refrigerate for an hour. Serve with cilantro.
