Vanilla Sponge cake

I love cakes- in all shape, all flavors, all colors and in every season. There is something in cakes that announce happiness. Right from adding the ingredients to buttering the baking dish to the smell of the freshly baked cakes wafting from the oven; everything signifies joy! To me every cake is a joy cake. Here’s a quick and easy one for all those who has a sweet tooth.

Vanilla Sponge Cake

Ingredients for the Cake:

  • 2 1/2 cups flour
  • 2 tsp vanilla essence
  • 1 cup unsalted butter
  • 1 cup milk
  • 3 eggs
  • 2 1/2 tsp baking powder
  • 2 1/2 cups sugar


  • Sift both the flour and sugar. Sift the flour and baking powder together. Whisk the butter and sugar together. Add one egg at a time and whisk. Add milk. Then slowly add the flour mixture in batches, whisking all the while. Add the essence and whisk for one last time
  • Butter the baking dish and line with butter paper (optional) (to make taking it out easier). Distribute it evenly. Bake at 180 degrees for 30-40 minutes. Poke a stick and see if it comes out clean.

For the chocolate icing:

  • 1 stick of unsalted butter
  • 1 cup of icing sugar
  • 1/2 cup of cocoa powder
  • A pinch of salt
  • 1 tsp vanilla extract
  • 1 cup milk (depending on how fluid u want)


  • Blend the butter, the icing sugar and a pinch of salt together. Pour in the cocoa powder and blend. Add vanilla extract and milk (one tbsp at a time)
  • Spread it evenly on the cake, make textures and fuel your cake decorating fancies! With an hour and half in your hand, you are ready to give a perfect treat!
