Light Apple Cake

Though this particular cake reminds me of autumn, its around that time of the year that they are made in our home, yet this sure is a delight in any season.  Light and airy and yet warm and full in flavor, an apple cake is your way to a slurrpalicious nirvana.

Ingredients:

  • All-purpose flour – 3cups
  • Eggs – 3 nos
  • Sugar – 1 ½ cup
  • Baking Soda – teaspoon
  • A pinch of nutmeg
  • Oil – 1 cup
  • Chopped apple – 1 ½ cups
  • Walnuts – ½ cup chopped
  • Vanilla extract – 2 teaspoon
  • Sliced Apple for topping

Preparation:

Sift all the fry ingredients except sugar and keep aside in a bowl.

In another bowl, beat eggs an d pour sugar gradually and beat still fluffy. Add oil and beat for another 2- 3 minutes. Pour the dry ingredients in the blended sugar and egg blend. To this fold in the apples, walnut, and vanilla extract. Grease a 10 inch baking pan and pour the cake batter. Top with sliced apples and bake at 350 degree for 50 minutes to 55 minutes or until the skewer comes out clean.

Cool and serve.
