Steamed rice cake / Dhokla

Here goes one of my favourite recipes dedicated to all my Gujrati friends out there. Gujarat is in the Western part of India and is known for it mouth watering Indian cuisine. The first dish that any Gujrati person is identified with is ‘Dhokla’.

Soak Rava and Udad Dal in separate containers. After 4-5 hours, remove water and grind the Rava and Dal separately. Add water while grinding if needed such that each of these form a thick paste. Mix both the pastes together in the end and add curd to it. Add 1 tspoon baking soda and mix it properly. Keep this mixture aside in a covered vessel for 8 – 12 hours. The longer you keep the more sour it will get. If you prefer less sour, keep it for up to 8 hours and reduce the quantity of curd added above.

Post 8 hours, remove this mixture and add salt to taste and Eno. Also add the chilli ginger and garlic paste mentioned above. Mix it properly. Now take a cooker used to steam dhoklas. Add water at the bottom of the cooker. Grease a dish with oil and pour batter in this dish till it settles flat over the dish. Sprinkle red chilli powder on the settled mixture in the dish. Keep this dish in the cooker to let it steam. Cook it for 7-8 mins and check. Once cooked, remove the dish, cut the steamed preparation into diagonal pieces by using a knife. Remove the pieces and serve hot in a dish. Sprinkle chopped coriander over it.

Served with garlic chutney or ketchup, this yummy preparation is extremely healthy since we haven’t used any oil or fatty substance while cooking it. Eaten as a side dish by many in the main course, this can also be a tasty snack served with tea.
