Cluster Beans – Guvar Dhokli vegetable

This is a vegetarian dish made from Cluster beans (Guvar) and Dhokli. It can be cooked in different styles. Let me introduce you to the Gujarati style of making this vegetable

Ingredients:
  • 250 gms cut pieces of Cluster Bean / guvar
  • 100 gms wheat flour
  • 25 gms gram lentils flour – (besan)
  • 25 gms soy flour
  • 25 gms oat flour
  • Salt to taste
  • 2 tsp Red chillipowder
  • 1tsp turmeric powder
  • 1tsp garlic paste
  • 1 ½ tsp Ajwain Seed
  • 1tsp coriander powder
  • 3tbsp cooking oil
  • 1 cup water to cook and water for making dough
  • A pinch of cooking soda or baking powder

 

Method:
  • Wash the cluster bean pieces properly. Heat half i.e. 1½ tbsp oil in a broad frying pan on the gas. Reduce the gas flame when oil is hot, add 1 cup water to the hot oil. After adding the water, increase the intensity of the gas flame. When water comes to boil, add the cooking soda or baking powder. Add cluster beans and add salt only for cluster beans. Reduce the gas flame and keep it on slow flame. Stir and cover the pan for cooking properly. While this is getting cooked, prepare the dhokli
  • Mix all the flours mentioned above in a broad dish. Add 1½ tbsp (remaining) oil to the flours. Add salt to taste, half red chilli powder, half turmeric powder, half ajwain seeds, and mix properly. Make soft dough by adding some water slowly. Make very small parts from the dough. Roll the parts into small round shapes  and press on the palm firmly so that it becomes thin round small masala roti called thepli or dhokli. Make more dhoklis from the remaining dough. When cluster beans are very near to be ready, add all the remaining masala in it i.e.red chilli powder, tumeric powder, garlic paste, add ¼ cup water in the beans if there is no water left in it and then put the dhokli. Spread the dhokli on the suface of beans. Do not stir now. Cover the pan,  put some water on the cover if needed. Cook for few minutes. Dhokli will be cooked within 7 to 10 minutes. Then throw water in the sink from the cover and stir the beans and dhoklies. There should be no water left in the beans and dhokli vegetable once it is cooked.
  • Add remaining ajwain and stir again. Add coriander powder, stir and remove in serving pan.
