Potato Brinjal / Aaloo Baingan

Here’s an addition to my day to day recipes list. For a person who has just started cooking and is still learning, here are a few simple dishes that can be made without any trouble and are good vegetable dishes that can be served with Roti / Indian Breads

Potato brinjal (Aloo Baingan) Vegetable

Ingredients:

•400gms Baingan (brinjals)

•100 to 150 gms Aloo (potatoes)

•Salt to taste

•1tsp red chilli powder

•¼ tsp turmeric powder

•2tbsp oil, pinch of asafoetida

•½ tsp mustard seeds

•Coriander powder

•2 to 3tsp oil for tadka

•Green Salad to garnish

Preparation:

Wash the brinjal and potatoes and cut them into square pieces. Wash the cut pieces again to completely remove dirt if any. Heat oil in a frying pan on the gas. Add mustard seeds in it. When it starts making popping sounds, add asafoetida, turmeric powder, and red chilli powder. Stir and add brinjal and potatoes. Add salt, stir and cover the cooking pan. Cook on medium flame gas. Stir in between. Keep checking in every few minutes. You can poke the brinjal piece or potato piece with a knife and to check if it is cooked. Once cooked, put off the gas, spread coriander powder on it and stir it properly.

Remove in serving pan or dish. This can be served with Indian Breads known as roti and lentils / daal.

To make it tastier, it can be garnished with Green Salad (Optional), as shown in the image.
