Creamy Chicken Soup

#LivingWellWithDiabetes is easy when you know exactly what kinds of foods help you for the same. A small amount of chicken is a good non-vegetarian option for Diabetics, who can’t consume read meat, as the latter causes coronary heart disease, if eaten in good amounts. Chicken is a good choice for #LivingWellWithDiabetes  not only because it has a low fat content, but also because it is low in carbohydrates and calories.

This Chicken soup uses celery as one of its ingredients. Did you know that celery is great for diabetics and for people having a risk of Type 2 Diabetes. Celery is rich in Vitamin K, and this recipe uses 1 cup of it (approximately 29 micrograms). According to a study published in the journal “Diabetes Care” in 2010, people eating more Vitain-K-rich foods have much lesser risk of Diabetes!

In this recipe, we incorporated a superior diabetes-friendly product called Glucerna SR from Abbott. This product helps you to minimise bloood sugar spikes and is formulated with slow release energy system. This recipe does not need any carbohydrate side dish (like rice or chapati) as we have added Glucerna to the soup, and this product acts as a partial meal replacer.

This Creamy Chicken Soup recipe is special. Avocado used in this recipe will help in making this dish even more diabetes-friendly, as it is rich in monounsaturated fats and has good-quality carbs, which in turn improves heart health.

Creamy Chicken Soup

Ingredients:

Boneless chicken pieces: 250 g

Buttermilk: 500 ml

Finely chopped celery: 1 cup

Garlic (chopped): 2 tsp

Onion (chopped): 4 tbsp

Lemongrass stem (finely chopped): 2 tbsp

Avocado (chopped into medium-sized pieces): 1

Soy sauce: 1 tbsp

Salt and pepper: according to taste

Glucerna powder: 4 tbsp

 

Method:

Combine all the ingredients, except Glucerna. Pressure-cook until two whistles. Switch off the gas. Open the cooker lid and remove the chicken in a bowl.

Blend the remaining soup in a blender. Filter the soup through a large sieve. Add the Glucerna powder and adjust the seasoning. Add the chicken pieces back to the soup. Enjoy the healthy and delicious soup!
