Quinoa and Oats Pancakes

Having Diabetes doesn’t mean that you cannot enjoy good food. Of course you can, but your dishes have to be smarter, and that can happen only when you choose smart ingredients. For example, you can still have delicious pancakes, but not with refined flour. Instead, choose quinoa and oats to make your pancakes. Adding Glucerna Shake to the pancake batter not only improves the taste and aids in weightloss, but it is also clinically proven to optimize glycemic response or to help normalize blood sugar levels. Quinoa and Oats Pancakes

Ingredients:

Quinoa (soaked overnight): 1/2 cup

Oats (soaked overnight in 1/2 cup milk): 1/2 cup

Buttermilk: 1 cup

Egg: 2

Glucerna vanilla shake: 1 bottle

Extra virgin Olive oil: 2 tbsp

 

Method:

Combine and blend all the ingredients, except the olive oil. The pancake batter should not be too thick. If too thick, add more buttermilk.

Heat a non-stick pan. Add a little olive oil and heat it. Add a ladleful of the batter to the pan. Wait till the edges turn golden. Flip the pancake. Cook for 5 min.

Serve the pancake with a drizzle of yogurt, instead of honey.
