Sweet guava jelly wrapped in pastry puff and baked into a golden perfection, Patelillos de Guayaba is a south american favorite that’s definitely worth a try! Best part is, you can buy pre-made pastry puff too from any confectioner and make it anytime you like: the pastry dough freezes quite well and for at least a week, if kept wrapped.
For Pastelillos de Guayaba, you’ll need:
- Guava: 1 cup
- Sugar: 1/2 cup + 1/4 th cup
- Pastry puff: 1 pound or 1/2 kilo
- Icing sugar: to top
- Water:1/3 rd cup
Procedure:
- Make the jelly
- Boil Guava and sugar until a sticky paste and keep aside.
- Flour a baking tray and keep aside and heat oven to 325 F.
- Roll the pastry puff on a floured surface. Cut rounds from the pastry puff. Place guava jelly in the center of the circle of one round and cover with another. With a fork, close the ends. The ends should look sealed and striated.
- Bake for about 15 minutes.
- Meanwhile in a pot, boil 1/3rd cup water and 1/4th cup sugar to a thick consistency
- Take the pastries out after 15 minutes. Using a brush, brish them with sugar syrup and bake them for another 5-7 minutes.
- Cool on a wire rack.
- Serve with tea or ice cream!
