This spicy egg masala is an absolute favorite and a quick dish to prepare. The boiled eggs are cooked in a spicy masala to give it a tangy twist.
Ingredients:
- Eggs – 4
- Oil – 2 tbsp
- Onion – 2
- Green chilly – 1
- Ginger garlic paste – 1/2 tbsp
- Tomato – 2
- Red chilly powder – 1 tbsp
- Turmeric powder – 1/4 tsp
- Coriander powder – 1/2 tbsp
- Garam masala powder – 1/2 tsp
- Cumin powder – 1 tsp
- Salt to taste
- Coriander leaves – for garnishing
Procedure:
- Boil eggs, take off the shell and keep it aside.
- Heat oil in a fry pan.
- Add onions and saute till it turns transculent.
- Add green chilly and ginger garlic paste.
- Saute for 2 mins.
- Add tomatoes and fry till it is done.
- Now take the eggs and partially slit in the centre and add to the pan.
- Add red chilly powder, turmeric powder, garam masala powder, coriander powder, salt and cumin powder.
- Stir well and cover the pan.
- Allow to cook in low flame for 8 to 10 mins stirring once in a while.
- Turn off the flame and garnish with freshly chopped coriander leaves.
- Serve hot with chapatis, rotis or rice.
