Spicy corn for rainy evenings

It’s interesting how everything changes with season. The environment we live in, the clothes we wear, the color palettes in our home, the things we choose and of course the food we eat. It all happens without notice, silently, inevitably. And Ive always believed that it is probably the memoirs attached to the seasons that gives these little things their added flavors in that particular time of the year. Or else, tell us why then does that cup of tea tastes so much sweeter when its raining outside than it would on a regular day? To me nostalgia is the answer. You choose your own.

Nothing fancy, this is one simple recipe quite effortlessly brings in the flavors of childhood and rain, up in the hills beside a glass window on my settee.  And i’d be surprised if you don’t have times to recall that has rain and corn on the cobs in it! This is our loving “bhutta”- reinvented!

Ingredients

Pepper: 1 medium, diced

Red onion: 1 medium, diced

Corn kernels: 1 1/2 cups

Chilli powder: 1/2 tbsp

Cumin powder: 1/2 tbsp

Pepper: 1/2 tbsp

Cherry tomatoes: 6, quartered

Salt to taste

Procedure

Heat oil in a wok. Fry the onions and pepper until slightly translucent. Add in the spices, corns, salt and toss.

Thats it.

Oh, wait for the rain to fall! Enjoy!
