Stir-Fried Vegetables in Olive Oil

Ingredients in Stir-Fried Vegetables in Olive Oil:

  • Zucchinis: 2 unpeeled and cut in cubes
  • Bell Peppers (red, yellow and green): chopped
  • Brocolli Florets: 2 cups
  • Red onions: 1, chopped
  • Rosemary: 3 sprigs, chopped
  • Baby Corn: 1/2 cup
  • Sliced Mushrooms: 1/2 cup
  • Sliced Scallions: 1/4 cup
  • Olive oil: 4tsp
  • Salt and pepper to taste

Procedure to make Stir-Fried Vegetables in Olive Oil:

  • Heat a wok with olive oil. Mix all the vegetables and stir fry with rosemary, salt and pepper. (*If you do not have rosemary, you can use mixed Italian herbs too.)
  • Stir fry for about 3-4 minutes and serve warm.
