Potato Curry with Roasted Peanuts

I’m not too fond of the potato like the rest of the universe. But since I had a time crunch and had a batch of boiled potatoes in the fridge, I decided to try something new. After I had made the dish I realized that it’s better to use boiled potatoes for this recipe, since it does not call for much oil than otherwise. Just at a whim I coarsely ground some roasted peanuts and mixed it with the potato and the effect was amazing!!

Ingredients:

  • 4 large boiled potatoes
  • 1 green chili
  • 100 gm roasted peanuts
  • Salt
  • Turmeric powder
  • 1 tsp red chili powder
  • 1 tsp mustard oil
  • 2 tbsp oil

Method:

  • Heat some oil in a pan, add the mustard seeds
  • Once it crackles, add the chopped green chili and stir
  • Add the chopped boiled potatoes, salt, turmeric and red chili powder and stir
  • Keep the lid of the pan closed so that the potatoes become crisp
  • Add more oil if required
  • Towards the end, grind the roasted peanuts coarsely and sprinkle it on the potatoes
  • Again stir and keep the pan closed for 5 minutes
  • Serve hot with rice/ chapatti
