Eggless Sugarless Carrot Cake

Well this is a cake I baked for my Dad’s Birthday and it’s an eggless, sugarless healthy carrot cake. I used a mix of the all purpose flour and whole wheat flour for the fiber contents. Well, if you think sugarless making it unappetizing, it has a rich dose of raisins, dates and honey to provide natural sweetness. I’ve added a hint of grated ginger too which blends excellently with the rest of the ingredients. The outcome is a healthy, rich and dense delicious cake.

Ingredients:

  • ½ cup all purpose flour
  • ½ cup whole wheat flour
  • 1 cup grated carrots
  • 1 tsp grated ginger
  • 1 tsp baking powder
  • 2 tbsp sour cream
  • ¾ cup chopped dates and raisins (mixed)
  • 3 tbsp honey.
  • ¼ tsp salt
  • ½ cup cooking oil
  • 2-3 tbsp milk

Method:

  • Put all the ingredients in a blender to make the batter
  • Squirt some milk in case it becomes too thick
  • Preheat the oven at 180 degrees C
  • Grease the baking dish with some butter
  • Pour the batter into the cake dish and bake at 180 degrees C for 35-40 minutes or till a wooden tooth pick inserted in the center comes out clean
