White Dhokla- Steamed Cakes from Gujarat

Apart from the Khaman Dhokla recipe that’s given on the website, there’s the White Dhokla which is as delicious and healthy too. The ingredients are different and so is the color. I tried it out for breakfast last week and it was a huge success. This recipe could be called the Gujarati version of Idlis because they have the two most important ingredients in common- rice and split black gram (urad dal).Ingredients:
•    3 cups rice
•    1 cup urad dal
•    ½ cup sour curd
•    2 green chilies (ground into a paste)
•    1 tbsp grated ginger
•    ½ tsp soda bi-carb ( or one sachet eno powder)
•    2 pinch asafetida
•    2 tbsp oil
•    Salt
•    1 tbsp Mustard seeds

Method:
•    Wash and soak the rice and urad dal in water overnight or for 7-8 hours and grind into a batter
•    Add the sour curd and mix into a thick batter
•    Allow it to ferment for 7-8 hours
•    After it ferments, add soda bi-carb, oil, asafetida, green chilli, ginger, and salt and mix well.
•    Grease a dhokla tray with some oil/ghee and pour the batter so as to fill half the height of the tray.
•    Steam for 10-12 minutes
•    After it cools, cut into squares, give a tempering of mustard seeds and serve with green chutney
•    Repeat with the rest of the batter
