Mix Vegetable Raita

Curd is extremely good for health and is supposed to help increase immunity. It kills bacteria and can help fight various diseases. It is also very good for heart .One can mix vegetable with curd and eat as a variety to Vegetable Salad. This is called Mixed vegetable Raita

This Raita is the best for summer, as it has a very cooling effect on the body.

Ingredients

  • 1/4 cup sliced cucumber
  • 1/4 cup sliced tomato
  • 1/4 cup sliced onion
  • 1/4 cup sliced carrot
  • 1/4 cup sliced red or white radish (optional)
  • 1/4 cup sliced beet
  • 1/4 cup finely chopped coriander
  • Few mint leaves
  • 3 to 4 cup skimmed milk yoghurt
  • 1-2 tsp roasted semi crushed mustard Powder
  • 1 tsp Sugar (optional)
  • Salt to taste
  • Small pieces of 2-3 green chillies
  • 1tsp jeera-cumin powder
  • ½ tsp black pepper powder

Method:

Take yoghurt in a bowl and blend it properly. Add all the sliced vegetables to it. Add salt, mustard powder, cumin powder, black pepper powder, green chilli pieces and sugar (optional-if you like). Mix it properly. Sprinkle coriander on it. Put mint leaves on it and serve it.
