Crispy Onion Bhajias

Ingredients:

  • 250gms onions
  • 2 tbsp fenugreek leaves
  • 2 tbsp coriander leaves
  • 250 gms gram flour- besan
  • Salt to taste
  • ¼ tsp turmeric powder
  • 1tsp red chilli powder
  • 1tsp coriander powder
  • ½ tsp garam masala – optional
  • 300 gms cooking oil for frying

Method:

 

Peel off onions, wash properly and cut them into thin slices. Take water in a bowl and soak the slices in water. In the meantime, wash and chop fenugreek leaves and coriander leaves. After some time, drain the water from the onion slices and remove the slices on a clean dry cloth and let them dry. Separate the rings of the onion slices. Heat oil in a frying pan on the gas. Till the oil comes to boil,  take gram flour in a broad vessel or a bowl. Add salt, turmeric powder, red chilli powder, coriander powder, garam masala (optional). Mix all of it properly. Add and mix fenugreek leaves, coriander leaves and onion rings. Make a paste from the same. Check the oil by putting small part of the mixture. If the part comes on the surface immediately then the oil is heated up. Add some more parts gradually from the mix. Cook them on medium flame of gas. Drain oil and remove them in a plate when they are brownish and crispy. These are bhajias, they are very crispy and tasty.

Serve them with green coriander chutney and tomato sauce. These are best enjoyed with hot tea.
