What’s Halloween without a little tiny weeny darling pumpkin? Nothing right? So after a chunk of delicious bloodly looking cheese cake, here’s the other temptation. Let’s sink our teeth in these fleshy pumpkins…ah well, pumpkin cake. all the same..all the same!
Pumpkin Cake Recipe with Cream Cheese Frosting
- All purpose flour: 1 cup
- Butter: 1/2 cup
- Baking powder: 1 tsp
- Eggs: 2
- Grated pumpkin: 1/2 cup
- Nutmeg: 1 teaspoon
- Vanilla Extract: 1 tsp + 1/2 tsp for icing
- Castor sugar: 3/4th cup
- Cream cheese: 1/2 cup
- Confectioners sugar: 3/4th cup
Mix flour, nutmeg powder and baking powder in a bowl.
in a separate bowl, cream sugar and butter. Beat in the eggs gradually. Fold in vanilla.
Now mix the dry ingredients to the wet. beat well with a fork and finally add the grated pumpkin.
Bake in a greased pan for 15-20 minutes in 200.
Beat cream cheese, sugar and vanilla well.
Ice on cake when completely cooled.
