Lemon Curd

One of the easiest things to whip up, lemon or lime curd looks and tastes just as rich and delicious irrespective of the simple recipe that goes behind its making. Top your tarts, biscuits or just a spoonful, straight from the jar! This is the ultimate lemony delight.

 

Lemon Curd

Ingredients:

  • Eggs: 3 large
  • Fresh lemon juice- 1/3rd cup
  • Finely shredded lemon zest – 1tbsp
  • Granulated sugar- 3/4th cup
  • Unsalted butter-   4tbsp

Procedure:
In a double boiler add eggs, sugar and lemon juice. Stir constantly until the mixture becomes thick. Check so that it doesn’t form lump. The process to be completed should take around 10 minutes. Remove from heat and strain through a fine mesh net if there are visible lumps. Cut the butter into small pieces and whisk into the mixture until all the butter has melted. Add the lemon zest and let it cool.
Note: It will thicken only with time and as it cools. So don’t panic if it’s a little runny in the beginning. Also, do not use bottled lemon juice as it will not work.
