Eggless Fruit & Vegetable Cake

More than 7 out of 10 people in India are obese. However, with Christmas and New year setting in, everyone is in a festive mood. Festive season calls for indulgences, especially in eating. The more you try to resist the yummy delicacies the more you crave for them. Keeping this in mind, here is a tasty cake recipe that can be baked this christmas without an ounce of guilt and fat. Ingredients:
200gms shredded carrots
200gms shredded apple
100ml or 1cup orange juice
¼ cup soy bean flour
¼ cup oat flour
1cup maida
1tsp dry yeast
½ cup hot skimmed milk
1cup skimmed milk powder
½ cup sugar substitute powder like stevia or splenda powder
8 tbsp butter
2tsp baking powder
Slices of dry fruits almond and cashew nuts optional
¼ tsp cardamom powder
Some few drops of vanilla flavour or your favourite flavoured essence
Method:
Soak dry yeast in half cup hot milk. Take wheat flour, maida, soy flour, and oat flour in a bowl. Add butter and baking powder in it, stir and mix properly. Now add shredded carrots, apple orange juice, skimmed milk powder, cardamom powder and dry fruits slices. Stir milk with dry yeast and add in the mixture. Mix them properly and try to make paste type dough. If necessary add some milk. After mixing and making dough cover the dough with a lid with wet thin cloth for at least 1 hour. Remove it in a cake mould vessel. Bake it on 225 degree for 15 minutes in a pre heated oven griller. Check after that and if necessary keep again on 200 degree for 15 minutes. When the top layer becomes brownish in color, your healthy and nutritious yummy cake is ready to be served.
It can be eaten hot as well as cold. Hot cake tastes yum with ice cream and chocolate sauce. Make it healthier by choosing the sugar free ice cream and chocolate sauce available in the market
