Almond Kuchen Roll

Ingredients:

  • 5 cups all-purpose flour
  • 1 package active dry yeast
  • 1 cup milk
  • ½ cup granulated sugar
  • 1/3rd cup butter
  • ½ teaspoon salt
  • 2 eggs
  • 1 cup packed brown sugar
  • 1/3rd cup all-purpose flour
  • 1/3rd cup butter
  • 2 cups chopped dried plums
  • 1/4th teaspoon almond extract

procedure:

  • In a large bowl combine 2 cups of the flour and the yeast and set aside.
  • Heat milk, granulated sugar, 1/3 cup butter, salt just until warm. Add this milk mixture and eggs to flour mixture. Beat with an electric mixer and incorporate as much flour as you can.
  • Turn dough out onto a floured surface. Knead in remaining flour to make a soft elastic dough. Roll it to a smooth ball and let it rise for 1 to 1 ½ hours in a greased bowl.
  • After it has risen, punch dough down and divide it into a half. Cover with a clean kitchen towel and let it rest for another 10 minutes.
  • Turn onto a lightly floured surface. Divide in half. Cover with a clean kitchen towel and let rest 10 minutes.

FOR FILLING:

In a medium bowl, stir together brown sugar and 1/3rd cup of flour. Cut in some butter and stir in almonds and plums.

Now, roll each dough into a rectangle. Pour some filling and roll in the rectangle in a long cylinder. This is called a log. Pinch dough to seal ends and let ot rise in a warm place for about 30 minutes.

Preheat oven to 375 degrees and bake for 20 to 25 minutes or until golden and bread sounds hollow when lightly tapped. Slice to serve.
