Welcome summer and the market is flooded with both raw and ripe mangoes. Though ripe mangoes are a delicacy, it is the raw mango that holds sway for those who love a tangy taste. For the preparation of chutney with raw mango the proportions of the other ingredients depend largely on how sour the mango is. Here’s my mango chutney recipe.
- ½ a raw mango in pieces
- 1 large onion sliced
- 5-6 small red onions
- 1 green chilli
- 1 cm ginger
- 1 ½ cup grated coconut
- salt to taste
- Blend the raw mango, both the types of onions, chilli, and ginger into a fine paste.
- Add to it salt and grated coconut and blend. The coconut should not be ground fine.
- Transfer the mixture into a bowl and it is ready to serve.
