A healthy alternative to traditional pancakes, we didn’t know about this until our friend from Darjeeling suggested it to us. Well, That’s how far as Tofu has reached from China we guess but once we tried it on a dull and dreary saturday morning, we fell in love with it.

Here’s to you a traditional English breakfast with a twist.

Ingredients:

1 box silken tofu

or 1/4 cup low-fat cottage cheese

4 egg whites

1 teaspoon vanilla extract

1/4 teaspoon cinnamon

1/4 teaspoon nutmeg

Procedure:

Blend all in a blender.

Ladle batter on to a non stick pan and cook both sides until golden brown

Maple syrup, honey, cranberry juice or cream with fresh fruits. Anything is slurrpable, just fine.

Oatmeal has graced our tables for ages or maybe even centuries and quite happily so. Step inside at 8:00 A.M in our house and you’d find steaming bowls of oatmeal, served and ready to be devoured. And quite contrary to popular opinion about oats, we used to love it: the twist was powdered cinnamon and a dash of vanilla!

This is how oatmeal gets cooked in our home and believe me this will be your family favorite too once you’ve tried this.

Ingredients

Milk: 1/2 cup

Water: 1/2 cup

Sugar: 1tbsp

Vanilla extract: 1/2 tsp

Powdered cinnamon: 1/2 tsp + a bit for garnish

Oats: 3 tbsp

Procedure

Boil the milk & water with vanilla and powdered cinnamon in athick bottomed pan. To this add oats and sugar. Cook till oats leave the side of the pan.

Pour in individual bowls and serve with a dash of cinnamon.

Sunday brunch! The name itself makes you feel so cozy! Getting up late, pampering yourself, treating your taste buds to some delicious platter, strolling by the beach- oh, it feels great to think about it anytime, any day!

And although this Sunday Brunch recipe that I’m going to share is something you’ll need to make ahead of your time, let me tell you, this will be so totally worth it! Make yourself a bunch of homemade herb bread and see how it nudges you to eat more!

Ingredients:

Warm water: 2 cups

Dry baker’s yeast: 2 tbsp

Vegetable oil: 4 tbsp

Sugar: 2 tbsp

Salt: 2 tbsp

All-purpose flour: 5 cups

Mixed herbs: ½ teaspoon

Procedure:

Step 1: Add yeast to 2 cups of water and mix together. Pour in the salt, sugar and oil to the mixture and let it stand for half an hour.

Note: some recipes call for the mixture of salt to the flour and sugar to the yeast. That’s valid too.

Step 2: Grease a loaf pan with very little oil and keep aside.

Step 3: In a bowl, sift flower and add the yeast mixture. Mix it with a fork and gradually add all of the flour to form a ball around your fork. Take it out from the bowl, sprinkle some flour in your kitchen counter and knead it to form a smooth ball.

Step 4: Keep the dough on a clean bowl and cover it with a tea towel to rise. Let it rise for atleast an hour.

Step 5: Punch out all the air from the risen dough, give it another knead and in the shape you’d want, shape it up, place in your baking tray and let it rise for another half an hour to 45 minutes.

Step 6: Give it an egg wash (See recipe below) using a brush. Sprinkle the herbs on top and pop it in the preheated oven in 425 F. Bake for 20-25 minutes.

Egg wash recipe: One egg, 2-4 tbsp of water. Whisk it briskly and keep aside.

Try with with mayonnaise and olives in brine! Yum!

A wonderful hot and sour soup, stuffed with minced vegetables and garnished with fried noodles, this is a great monsoon drink to chill with. And without jumping directly into the ingredient, we’ll go a bit beyond food and begin by breaking a bubble. This is fun and we know you’ll be surprised to know!

Although it may sound quite Chinese, (add in your nasal tone, of course), you’d be thrilled to know that there is no such region or term or even a dish called Manchow in China. This, in actual, is made in India, a shining example of what we call, “Indian Chinese” and we are not too ashamed about it! Not as long as its tasty!

Count on us when we say that on a rainy day, a bowl full of hot Manchow from our dear Chinese corner and a couple of friends to tag along is the best thing you can do,unless you’d prefer to have it homemade, chiefly due to hygienic reasons: precisely why we cornered it in the first place!

NOTE: If you are a vegetarian, you can replace chicken with tofu and chicken stock with vegetable stock. You can make vegetable stock by boiling small amount of carrot, spring onion, capsicum and salt together. The boiled veggies can be used in making Pav bhaji.

Okay, here’s the ingredient:

Carrot: 1 medium, finely chopped

Cabbage: 1/4th small, finely chopped

Spring onion greens: 1 stalk, chopped

Green capsicum: 1 medium, seeded and chopped

Boiled chicken: 50 grams, shredded

Mushroom: 3-4, finely chopped

Noodles: 1 cup, boiled

Spring onions: 2, finely chopped

Garlic: 8-10 small cloves or 7-8 large, finely chopped

Ginger: ½ inch, finely chopped

Green chilies: 2, finely chopped

Chicken stock: 5 cups

Salt & white pepper powder to taste

Red chili sauce: ½ tbsp

Dark soy sauce: 2 tbsp

Corn flour: 3 tbsp

Vinegar: 1 tbsp

Procedure:

Step 1: Fry the boiled noodles and keep aside

Step 2: Add oil to a wok and stir in garlic, ginger, green chilies and spring onions. Sauté for a minute or two and add all the vegetables. After a couple of minutes, add the chicken and stir fry

Step 3: Add the chicken stock, salt and pepper and let it come to a boil.

Step 4: Add all the sauces and simmer it for a couple of minutes

Step 5: Dissolve corn flour in half a cup of chicken stock and pour it in. Cook until the soup thickens.

Serve hot with fried noodles, spring onion greens and vinegar.

Enjoy!
